Preparation for chocolate sponge cake

For a mold with a height of 10 cm:
- Ø 13.8 cm: 125 gr of mix
- Ø 17.8 cm: 250 gr of mix
- Ø 20 cm: 375 gr of mix
Veillez tout d'abord à ce que tous les ingrédients soient à température ambiante.
Préchauffez le four à 180°C (four à chaleur tournante : 160°C).

Remplissez un moule beurré (à moitié ou aux deux tiers) et faites cuire le gâteau dans le four préchauffé.
N'ouvrez pas le four pendant la cuisson !
La génoise est prête lorsqu'elle est souple au toucher.
Démoulez la génoise dès sa sortie du four et déposez-la sur une grille pour que la vapeur puisse s'évaporer.
