What material to choose for your chocolate mold:

Polycarbonate chocolate molds

These are the most common molds in the world of chocolate . These are very resistant molds and have the advantage of being transparent, which greatly facilitates decorating and layering colored chocolates.

Another advantage is that they last over time provided you take care of them. To preserve your polycarbonate chocolate molds you must: wash them as soon as you use them, with lukewarm water and a non-rough sponge, you can also put them in the dishwasher without the temperature exceeding 70°C. Finally, avoid stacking them on top of each other or too close to an iron element, you don't want the molds to get scratched!

Silicone chocolate molds

The silicone molds for chocolate arrived in our store a little later than the polycarbonate molds. They also have their advantages, they allow you to unmold your chocolates more easily, they resist temperatures ranging from -55° to +230°, allowing you to place them in the oven or in the freezer. Another notable advantage is that they allow you to create more daring shapes and are dishwasher safe.

However, it can be more complicated to decorate chocolates in a silicone mold because they are not transparent.

Why use a professional chocolate mold?

Chocolatiers have been using chocolate molds for a very long time and the reasons for this are numerous, between saving time and diversity of shapes we tell you everything about why to use a chocolate mold. You will only want to buy a chocolate mold after that!

How to unmold your chocolates?

It's simple to remove your creations from the chocolate molds. You must wait until the chocolate has cooled and hardened sufficiently in the mold. Then on a clean, dry work surface place baking paper, take your chocolate mold, turn it over and tap/apply light pressure to the mold cavities. The chocolates should start to fall apart.

Tip depending on the type of mold used : If you are using a silicone chocolate mold , you can bend the mold slightly to help release the chocolates.

If you are using a plastic chocolate mold , you can gently press the base of the mold or twist it slightly to help release the chocolates.

If you notice any imperfections or excess chocolate on your creations, use a file or knife to remove the excess.
