Isomalt or isomalt is a sweetener, it is found in baking in the form of cake decorations and as a replacement for sugar. It has half the calories of sugar and has the advantage of being completely transparent.

It is a product that colors very well with liquid food coloring .

We make colorful cakes with isomalt like Geode cake or Splash Cake. You can also make other decorations, like boxes of bubbles for bubble cakes and also modeling! They are completely edible.

How to choose your isomalt?

Like each pastry product, isomalt has specific characteristics and ways of working with it specific to this type of product.

Isomalt is a special case because it allows you to create a special type of decoration, so to choose it you need to ask yourself different questions:

- What type of isomalt do I need? There are two types of isomalt, powder and crystal. Powder is easier to mix because it will bubble less, but it will not last as long as crystal.

- Concerning the quantity of isomalt that you need to buy, you must refer to the size of your project, for example if you want to fill a silicone mold with 12 cavities of approximately 3cm each, you will need between 500gr and 600gr of 'isomalt.

- If you want to color the isomalt, be aware that you will need gel or liquid coloring.

How to use isomalt?

Isomalt is used by melting it, we will give you a technique for using 100g of product.

So place the isomalt in a saucepan, add a teaspoon of water and 1 drop of food coloring (if you want to color it). Melt the sugar over low heat without stirring!

Once the isomalt is melted you can shape it into any shape you want. The simplest way to model it is to use a silicone modeling mold, you just need to pour the isomalt onto the mold and let it slide into the gaps. Pierce any bubbles that may have formed in the isomalt with a toothpick.

Leave to dry for 20 minutes then unmold the decoration thus formed, use edible varnish to prevent the isomalt from turning white.
